Saffron-Infused Sardinian Ciciones (Gnocchi)
45 mins prepServes 4
A simple recipe for traditional Sardinian gnocchi, or ciciones, made with semola flour, water, and infused with saffron for color and flavor. Historically, saffron was used to mimic egg dough for those who couldn't afford eggs.
Steep a pinch or two of saffron in warm water for a few minutes. Add the strands and their liquid to semola flour, as well as additional water as needed. Once the dough is well-kneaded and firm, let it rest for about 30 minutes. Roll ropes of pasta and cut them into chickpea-sized pieces. Form them into smooth gnocchi-like shapes and let them dry a little before cooking.
